Gather round folks because I have possibly the best ever cookie recipe to share with you.
It originally comes from Cupcake Jemma and is one I have made numerous times, much to the delight of Mr P! It's super simple and the resulting New York style chunky cookies are genuinely amazing - and this coming from someone who doesn't have a sweet tooth! Word of warning though... be careful how many you have hanging around the house because they are pretty dangerous!
ingredients:
Makes 12 cookies
190g cold unsalted chopped butter
135g caster sugar
135g light brown sugar
300g chocolate - I use a mix of milk and white chocolate bars chopped into chunks
415g plain flour
10g baking powder
1 tsp salt
2 large eggs
method:
Cube your butter and throw in a mixer with the caster sugar and brown sugar. Mix on a low speed until the butter has broken down a little into 'nuggets' (around 1 min).
Add your chocolate chunks and mix again on a low speed for 30 secs to disperse them around the mixture.
Add your dry ingredients and mix on a low speed until it looks like a breadcrumb rubble. You should still have some small chunks of butter.
Whisk your eggs and add them to the mixer. Mix on a low speed until the dough starts to come away from the sides of the bowl cleanly.
Divide the dough into 100g balls (don't worry about them being smooth balls, literally gather the dough together in a rough ball. This will give the cookies their uneven crunchy goodness!).
Put your cookies in the freezer for a few hours or overnight.
When ready to bake, preheat the oven to 180C and pop your baking tray lined with parchment in the oven 5 minutes before in order to get hot.
Bake for 13-15 mins (my oven usually takes around 14 mins). When ready, the cookies should be golden on top but will still appear soft when you remove them from the oven. Don't worry about this, they will firm up as they cool.
Leave to cool for at least 20 mins and enjoy!
